By learning to process it to do what you need, you’ll save time in the end - because the knowledge you gain will apply to all instruments.
This is what a physical studio would have to do. Rather than seeking a single “iconic” Rhodes, I would suggest it’s better to find one that you like, and focus on getting a good performance and processing it appropriately for the sound you want. So what we hear on the records we like isn’t the sound of the physical Rhodes itself. Finally, the sound went through an analog mastering chain, to vinyl, and then most likely was remastered in some respect to stream digitally. In a live room mic bleed would be mixed with the amp signal. They were recorded through vintage consoles and outboard into tape, then the transients on those tapes were degraded in the mixing process.
Different players hit the keys differently. Different models through different amps or piped direct sound differently. I’d gently revise your question, so that you don’t go down a rabbit hole with no solution.
